Somewhere deep in the Belize jungle, off-grid with only solar panels, a paradise I created, we all gathered. The earth oven cookout was a wonderful success. A blazing hot fire kept us all warm against the cooling temperature of the jungle. The barrel is 35 inches tall and I would say we filled at least 25 inches with charcoal and stones. It was hot!
I shoveled out half of it and made a layer of sand to create a safe place to set our food. We wrapped our items with a lot of tinfoil so that the pressure from the weight above will not puncture it. We began burying all our food with sand and leaving about an inch of two thick layer on top. I then shoveled the charcoal back into the barrel on top of the sand. This creates the oven effect. To further insulate I covered the top of the charcoal with fine dirt. Earth is an amazing insulator and the heat from the charcoal and stones will cool down at a slow rate, and over the twelve hour period that we let this cook for, it will stay hot.
